Q:
¿en qué momentos se usan apostrofes (') o la palabra of?
A:
you use an apostrophe with a contraction, here's a list of them
https://en.wikipedia.org/wiki/Wikipedia:List_of_English_contractions
I'd say we use about half of the contractions in that list still. some are old fashioned like "ne'er" and "'twas," you won't hear people say those but you may see them in a book or hear them in a movie if it's in the past.
you also use a contraction with possession. "John's cat" would be an example. "The people's choice for best actor" The only time an apostrophe is tricky is when the name/word ends with an S or a Z. In that case the apostrophe would go after. "Liz' dog" is an example. Even native speakers mess this up though.
"of" USUALLY translates to "de" in spanish, which is probably the best way to explain it. de/of are tricky for both english speakers learning spanish, and spanish speakers learning english. the best thing is to just practice and look at examples.
