Typically we might just say “thank you” it’s polite but also casual. Sometimes people don’t like being called Sir or Mam

I think saying “Thank you, sir” would be alright in most cases. Sometimes, women don’t like to be called “Ma’am” since that term is often used towards older women and it might seem as though you are calling her an old lady.
You can’t really go wrong with a simple “Thank You” though.
