These sentences can be combined with a comma. The second sentence cannot stand on its own.

So it should be like "Learning a language is not my cup of tea, especially with some languages that have a lot of aspects to be memorized.". Correct?

Un po' strano

I think “...some languages having a lot...” sounds more natural, but otherwise, yes. Perfect!
