I would pay more attention to his/her profile, carrier, achievements, purpose and so on when someone uses 人物, while 人 is used to just mention about his/her character or dispositions.
Though both can be used in most cases interchangeably, except for some compound words such like 人物像, 危険人物 and others, you are less likely to hear 人物 used in daily conversations than 人.
