In the second sentence, without the 'who', "her trying to take credit for my idea" becomes a single thought, like a phrase that is a noun.

Hard question. This is my answer, but there might be other equally valid ones.
The first one might be used more if there were a group of people you suspected and you wanted to emphasize "her".
The second one is more general use and doesn't emphasize "her" as much. It just identifies the person.
