Could anyone explain me how verb stems work please. I don't have many struggles with Arabic, but I feel like I am not able to use Arabic verbs. I know how to conjugate them , and I've already learnt the most important verbs in arabic, but this is frustrating because I never know what's the stem. I've heard about the 10 Arabic forms in Arabic but my Arabic books don't explain it and I can't find any good lessons on the web. And my father who's fluent told me that he wasn't able to explain in French

for example, "شاهد" becames "يُشاهِدُ", why and how do الفتحة, الضمة
and الكسرة change?

لا يوجد شيء اسمه تعلم التشكيل أو حركات التشكيل في اللغة العربية. 
التشكيل يعني النحو والإعراب، هو يشمل كل قواعد اللغة العربية ونحوها وصرفها. 
لكن هناك أساسيات عليك أن تتعلمها لتنطلق منها إلى احتراف التشكيل. 
معظم العرب يخطؤون بالتشكيل وهو غير مستعمل عادة في اللغة المحكية. كما قلت يمكنك أن تبدأ بالأساسيات: حالات الإعراب: الرفع والنصب والجر. متى تحصل كل حالة، وكيف يتغير الفعل في كل حالة. ثم هناك حالات شاذة للأفعال وتصريفاتها وإعرابها. 
مثلاً: شَاهد. هو الماضي. ولتحويله إلى مضارع أو إلى الوقت الراهن: يُشاهد. ولتحويله إلى مبني للمجهول يصبح: شُوهد. هذه قاعدة تنطبق على معظم الأفعال.
مثلاً: حالة النصب نستخدم الفتحة أو أمور أخرى عليك تعلمها. 
حالة الرفع نستخدم الضمة وغيرها. 
حالة الجر نستخدم الكسرة وغيرها.

I think it's not mostly important  for you  to learn التشكيل right now, it's related to Grammar, And mastering the Arabic grammar is no easy task even for natives . But you can start with the basics

Une petite remarque,
il ne faut pas confondre les choses,
les voyelles courtes qui se mettent sur la dérnière lettre de mot n'ont rien à avoir avec celles qui se mettent sur les lettre qui la précèdent. 
ce sont deux secteurs differents le premier s'appelle  الإعْرَابُ et le deuxième s'appelle الصَّرْفُ.

concernant le changement des voyelles  d'une forme à l'autre il faut d'abord que vous *connaissiez et reteniez les 10 formes basiques :

impér.   prése.   passé

فَعَلَ       يَفْعَلُ      اِفْعَلْ    I
فَعَّلَ       يُفَعِّلُ       فَعِّلْ   II
فَاعَلَ     يُفَاعِلُ      فَاعِلْ  III
أَفْعَلَ      يُفْعِلُ       أفْعِلْ  IV
تَفَعَّلَ    يَتَفَعَّلُ       تَفَعَّلْ    V
تَفَاعَلَ   يَتَفَاعَلُ     تَفَاعَلْ  VI
اِنْفَعَلَ     يَنْفَعِلُ     اِنْفَعِلْ   VII
اِفْتَعَلَ    يَفْتَعِلُ     اِفْتَعِلْ  VIII
اِفْعَلَّ       يَفْعَلُّ       اِفْعَلّ    IX
اِسْتَفْعَلَ    يَسْتَفْعِلُ    اِسْتَفْعِلْ    X

une fois vous maîtrisez ces formes vous serez capable de conjuguer la quasi-totalité des verbs dans les 3 temps tout en comparant le verbe que vous voulez conjuguer à l'une des formes précédentes.

puis
 écoutez quotidiennement, surtout les actualités en arabe authentique pour vous familiariser avec l'utilisation des différentes formes.

- ça dépend du verbe que vous voulez utiliser, 
prenons l'exemple ci-dessus 
شاهد = III forme 
donc il se conjugue de la même façon que ce dernier. 
شَاهَدَ    يُشَاهِدُ      شَاهِدْ

- ah, alors essayez d'écouter qqch de plus simple, je crois qu'il y a plein de vidéos sur youtube concernant ce sujet.
