The natural way to say these sentences is "everything he ever said" and "everything he said so far". I don't know why.
"So far" means "up to the current time" and "ever" means "in any instance". For that reason, if you say "ever", you are also talking about previous times doing something. But with "so far", it can mean previous times doing something, or it can mean the first time doing something. "So far" brings focus to the present moment. "Ever" brings focus to the past.
An example of "so far" when it is the first time:
She was sat in bad seats in the theatre, but so far, the play was so brilliant that she did not care. (Up to the current point in time, the play has been good. The event of seeing the play lasts for only a short time. She is seeing the play for the first time.)
An example of when it is a repeated event:
So far in my life, I've only made mistakes! (The time period is long, a person's entire life. The mistakes have been made repeatedly. But the focus is on the present moment.)
Then for "ever":
She was sat in bad seats in the theatre, but as ever, the play was so brilliant that she did not care. (She regularly finds plays brilliant, and this distracts her from anything wrong. She has been to multiple plays and is comparing experiences.)
In my life, I've only ever made mistakes! (It's the same meaning as the "so far" sentence, but the focus is on past events.)

The “ever” in this sentence expresses that everything he has said, whether today, last week, or 10 years ago, is not/has not been true.
“Everything he said so far is not true. “
“Everything he’s said so far is not true. “
“Everything he has said so far is not true. “
“So far” expresses that everything he has said up to this point, or up to the present time, is not true.
These examples might help you understand:
