So when you walk in, all the usual greetings you’d give to someone you don’t know very well would be good. “Hi, how are you?” “I’m here for my appointment at (insert appointment time).” They may ask you to take a seat whilst you wait for a hairdresser to become available.
Some basic small talk is usually good too. “Have you been busy recently?” “The weather is really nice today” “What did you do this weekend?” Just little things like that help to break the ice before you start to describe what type of haircut you like.

@natalie211199 Thanks for replying! What could I say when I don't have an appointment booked yet? I can't formulate the question properly in my head without making it sound strangely artificial.

You could say “hi, can I book an appointment with you for Thursday at 2 o’clock please? It’s for a hair cut/colour/blow dry”
If they don’t have an appointment available at that time: “Okay, do you have an appointment at 3 o’clock instead?” Or “What time do you have available?”
