Is it true that English people say for example "No, I don't" instead of one simple "No"?

I’m assuming you mean “English speaking people” since “English people” would be people from England.
It depends on the situation and personality of the person saying it, but we use both.

Maybe if you say something like, (this is just an example) "You like weird stuff." I would say, "No I don't" for emphasis. but I give a simple no all the time

@Shwartznwalder Oh, thanks I asked it because in Spain the first thing they teach you is the double negation/affirmation (No , I don't/Yes, I do)

@Ezeteo85 so this is one of those tough parts of English. The statement “No, I don’t” seems like a double negative, but it actually is an answer of “no” followed by a reinforcing statement of “I don’t” to emphasize that the answer is no.
A double negative would be something like “don’t not do that”, which would mean “do that”.
