「お早うございます。何にいたしましょうか?」「いつものやつ頼むよ。」「かしこまりました。ビールと枝豆でございますね。」「そうだよ。」

I'm not sure about two things here:

1. 「いつものやつ頼むよ。」
Is the やつ here 奴, referring to a person? As in "I'm requesting the same person"? It doesn't seem right at all, so I'm really confused about やつ here. It seems to me a particle was omitted, which confuses me even more.

2. It was an example sentence so I have no context, but it seems the person ordering is really familiar with the place. He uses casual language, whereas the person who serves him uses 謙譲語. Is this normal, or is the person ordering being rude?
