It depends on who you are addressing (who is the primary audience?)
If you are primarily talking to your boss, then you would typically say "you" while looking at or gesturing toward him.
However, if you are primarily talking to your colleagues (or just talking to everyone in the room generally), then you may refer to your boss by name or using the appropriate third-person pronoun (e.g. "he").
Note: In small groups (particularly if everyone is participating in the discussion), it is sometimes considered rude to refer to a person using a third-person pronoun (e.g. "he") if they are present in the group. However for larger groups and presentations, it is common to use third-person pronouns to refer to other people in the room (unless you are talking to them directly).
