I believe it works the same as other nouns. We say fruit when there's one/uncountable and fruits when more than one/countable.

I think they're interchangeable in most situations and it seems to be more of an individual preference. Fruits tends to be used when you're talking about different and specific types of fruit but if you're unsure you will likely be okay if you always say fruit.
Meat(s) and cheese(s) follow pretty similar "rules" as well.
