There are two meanings that are related, but not identical
If you say "take notes of this," you are literally telling students to write notes in their notebook.
If you say "take note of this" you are telling students to pay attention and understand what you are about to say, but you have not told them to write in their notebooks.

@Craig_C Craig, I was recently told that I should say "take notes ON this" if I want the students to write down what's been said/written, but you wrote "of" instead. Which one is it with that meaning?

@OscarGacitua I agree that you should use "take notes on this". I was mistaken. But "take note OF this."
