Do Italians usually say a shorter version of the whole word that a food is called? I’ve noticed in the show Sopranos, the Italian Americans usually don’t say the whole name of the food, like antipast’ for example.

I’m not sure I’ve got it, but I’d say: absolutely not! We don’t use any shorter version of the whole word that a food is called. “Antipast” is not an Italian word, we say “antipasto” and the final “o” is well pronounced, loud and clear.

I suppose they are actually speaking with a heavy southern accent, which would come as no surprise given that most Italian immigrants in the USA were from southern Italy. Southern dialects tend to reduce unstressed vowels, so they often don't pronounce the ones at the end of a word as well

ROFL! There is no single word that is pronounced properly, not even remotely, not even by the guy who poses as an expert (at 1:44 his “marinara” is mispronounced as well, I’d give him 5 out of 10 vs -1000 out of 10 of all the other people…). This not Italian at all. This is not how our language sounds. Probably it’s an overstereotyped Little Italy Language, I don’t know, it has nothing to do with standard Italian or any Italian dialects…

Historically speaking, at the beginning of the 20th century the South of Italy was notorious for its high level of illiteracy. This means that most of migrants weren’t the most educated people of the country. Probably they couldn’t speak properly even their own regional language… This must be led to the current idiom (something that sons and grandsons of migrants consider Italian but it’s not).
Anyway, I’m pretty sure that the problem is also a lack of thoroughness of who writes scripts: they could ask at least an Italian child for a consultation to reach a better result.
