Sightseeing is a gerund that basically comes from sightsee verb which means to visit historical places or any kind of places related to tourism activities. So it is also used as a noun بمعنى زيارة الاماكن السياحية وغيره
Sightseeing usually comes as a noun or let's say using the gerund (with ing)
In the examples above u said have been sightseeing
Here sightseeing is a verb +ing
It's not a noun.
Look in English we have a lot of types of verbs like
Present perfect
Which indicates sth happened in the past and has its effects till the present time
Have/has +verb (past participle)
I have stayed
2. Present perfect continuous
Used to indicate sth started in the past and still continuing untill now and might continue to the future.
Its structure :
Subj+have/has + been +verb +ing
Example:
They have been sightseeing
