Sorry I can't write accents here, but anyhow, I was supposed to translate this: "He is a cook in a big restaurant." I had previously learned that at or in are often translated as A LA or AU. But only DANS seems to work here. Why?

the first sentence is not said , "c'est un cuisinier A un grand restaurant" is not correct .
the correct sentence is "ce cuisinier A un grand restaurant "
the diference between the tow is that the sentence :
n°1 this cook owns a big restaurant ,and sentence
n°2 this is a cook in a big restaurant
"dans" mean within/in and "à" mean own/have.
if you mean "he is a cook is in a big restaurant " you have to say "il est cuisinier dans un grand restaurant" mean he works in a big restaurant and when you say "grand" in this sentence mean a restaurant which is expensive ,not large in surface
