Ce faci? you use when you want to know what somebody makes right at that moment and Ce mai faci? is kind of "How are you?" and you usually ask someone known when you meet him/her.

Well, it depends. "Ce faci" could be used as explained by AlexD, but also with the same meaning as "ce mai faci" - a more general meaning.

Examples:

Dan, what are you doing there? Are you watching a movie or studying?
Dan, ce faci acolo? The uiți la film, sau înveți?

Hi Dan, how are you doing?
Bună Dan, ce mai faci?
Bună Dan, ce faci?

Here, Dan would understand that he is asked in general. He could either answer "Bine" = I'm doing well. Or he could ask a bit more in detail: "Bine, beau o bere." = Good, I'm drinking a beer.

Ce faci? can mean how are you as a greeting, but literally means " what are you doing? "
ce mai faci? means "how have you been lately?" or " how are you doing?
(at least that's how I use them 😀)

"Ce faci" directly translates to "what are you doing," and can be used to ask someone what they're doing at that moment, but can also mean "how are you" if used as a greeting, just depends on the context. "Ce mai faci" directly translates to "what more/what else are you doing" but is usually only used as a greeting and essentially the same as "ce faci." When used as a greeting the difference between the two lies simply in how close you are with the person. If it's a friend you'd be more inclined to say "ce mai faci" to indicate you want to know how they are doing at that moment and what they've been up to, whereas you wouldn't necessarily say that to someone you're meeting for the first time. You'd just say "ce faci" to the stranger. Neither are anymore formal, informal, or polite than the other, just common greetings.
