“I will see you next Monday” (If today is Tuesday of this week, then that means I intend seeing you in 7 days’ time)
“I will see you the next Monday” When that Monday is will depend entirely on the context. If you are discussing meeting at some point in time but you are not available before a specific date, let us say a Friday which is a month away, you might say you are prepared to meet the other person on the next Monday.
