As you may know, they both are propositions, therefore you have to memorize all cases. However, there are some fixed situations, for example: "om" always comes with specific time
eg: ik moet om 2:00uur weg / I should go at 2
and op always comes with days
eg: hij komt er aan op woensdag / he will arrive on Wednesday.

* Ik zit op de stoel.
* Ik kom op zaterdag.
* Ik wacht op de bus.

* De bus rijdt om de kerk.
* Ik kom om 10 uur.

'Op' means 'on' in English (op de stoel = on the chair), but it can also be just a preposition that is always used with a specific verb (wachten op = wait for).

'Om' means 'around' (om de kerk = around the church), but also 'at' (om 10 uur = at 10 o'clock), among other things.

@Elske If I say Ik wacht voor de bus, instead Ik wacht op de bus. Would that be wrong?

'Wachten' has a fixed preposition 'op'. Like in English 'to wait' has a fixed preposition 'for'. Using a different preposition would be incorrect.
Unless you are talking about the place where you are waiting:
* Ik wacht voor de bus (= I'm waiting in front of the bus)

'Hij komt eraan op woensdag' is not what we normally say. This is what we say:
* Hij komt eraan. (He is coming this way; verb 'eraankomen')
* Hij komt op woensdag aan. (He arrives on Wednesday; verb 'aankomen')
