Well, this is an idaafah, right? Translate not from English to Arabic, but vice versa.
أي which
أيهما which OF them (2)
If you say أي الكتاب, that would be "which of the book"..
But if you say أي الكتابين, that would mean "which of the two books".
It should be clear that the first doesn't make sense in Arabic.
English logic can't be applied everywhere in Arabic, although I myself would like to have that sometimes. You need to understand phrases in their own arabic grammar.
In English, one can say "which book", but in Arabic, we say "which of the 2/3 books"

Thank you for the explanation. I just thought which of would be أي من but it seems that in Arabic it's only أي

when you say:
أي الكتابين
you are asking specifically about 2 specific books .. and not about a group of books nor about books in general.
It is like asking in English > "which of these 2 books ..."
