2 is more natural, but they are both correct. The difference is "the plan" and "a plan." "the" is definite and "a" is indefinite.

Only 2 is grammatically correct, but unnatural because you would instead say, "We plan to climb Everest next month," or "We are planning to climb Everest next month."
