It's a flavourful spicy cooking base here but the word sambal itself indicates how its first purpose is as a spicy dipping sauce (or some sort). Sambal Matah is made of shallot, garlic, chilli, lemongrass, lime juice, lime leaf, shrimp paste (terasi), salt and oil.

The recipe itself varies. Some may use sugar and tomatoes. But the main ingredients are shallot, garlic, lemongrass, lime and chilli. Basically all you need to do it chop the fresh ingredients and mix them together.

@Mya_usagi it sure is! Personally I love spaghetti sambal matah. Although it may sound weird, it's oddly very delicious. You should have a try!

@Mya_usagi the cool thing is it doesn't. I actually prefer them fresh but there are some others who prefer to cook it as well. But the thing is if you're not going to cook it then you need to re-evaluate the recipe you want to use because if you want to leave it fresh then you shouldn't use shrimp paste since they're meant to be cooked.
