What is the difference between a topic and a subject in a Japanese sentence?
The topic is marked by は and the subject is marked by が but I don't know what makes topics and subjects different.

If you are talking about something new, use 「は」. If you are trying to identify something unknown, use 「が」
食べた？ – Did you eat?
食べた - I ate
アリスは食べた？ – Did Alice eat?
食べた – She ate.
誰がチキンを食べた？ – Who ate the chicken?
アリスが食べた - Alice [is the one who] ate it.
Notice that the 「が」 particle is used twice because you need to identify who ate the chicken in the answer. You can’t say 「アリスは食べた。」 because we’re not talking about Alice. We’re trying to identify the unknown person that ate the chicken.

[は] is used to pick up a word as a "topic" from words in the context bubble. (Sometimes, it is also used to contrast something.)
[が] is used to "specify" a subject word of a verb or adjective. (As for some verbs, [が] is used to "specify" an object. できる, わかる, etc.) [が] is (often) used in a clause.
