Γεια σου is informal and I used towards people you know well or people who are younger than you. Γεια σας is formal so you use it towards someone older than you or you can use when you're talking to a lot of people as plural. For example you say Γεια σου to a friend or a child. You say Γεια σας to your teacher or someone older or to a group of people.

Για σας is if you’re saying hello to multiple people, Για σου is to a single person
