You can write "Bonjour Monsieur" with or without the name of the professor (but without is more common)

Hello,
If you are talking about a university professor, do not forget to address him/her by is degree title which would usually be Docteur, Docteure, Dre. etc.

@djat1984 Unless it's a great professor very well known, I never saw anyone address a professor by his degree. In my university all of my teachers have a doctorat and no one addresses them beginning with "docteur", the professors themselves wouldn't want that ^^
