So, it's like the verb underlines a particular aspect of the action, isn'it?
Can I use them with all kind of verbs or just with a particular type? Ex: I know动 is used only with verbs which indicate actions or movements.

I'm not sure how to answer your question, but I can give you some examples.
1.了(liao)：动得了：something can be moved or something can be touched, if it can't be, it is"动不了";
不得了：terrible or very;
2.动：搬得动：something is not too heavy for you so you have the ability to move it;"搬不动"means something is too heavy for you to move;
跑得动：you are young and you have the energy to run;but if you're exhausted or you're too old, you“跑不动”
3.下：装得下：the space is big enough to hold something.

Your 2 sentences are all correct,but it should be"菜"not“采” in 2nd one.
About“了”, “完”is one of its meanings. When it pronounces “liao” it means understanding(明了), the end(了结）, possibility（看不了）, terrible（不得了）, etc. When it pronounces “le” it's like “完”（洗了），and it also means a new change, e.g. “刮风了”means the wind starts blowing.

Anyway...and 下 means that you can do something if there is enough space that allow you to do the action, right?
For the second: "吃不下" literally means that you don't have space in your stomach anymore, and so you cant'finish all the food.
And it's the same for: 人太多了,我坐不下
