There's not much difference. Maybe if I was talking on the phone, and I wanted to make sure the person understood me, I would say, "Today is Tuesday," because it sound a tiny bit more clear or direct. ;)

It would be fine to say ”It's Tuesday today” but it would be much more typical to say "Today is Tuesday."
