You actually do need to hyphenate it when using it as an adjective. It's akin to saying a 10-foot pole.
You could also say “a church built in the 13th century” or “...from the 13th century.”

joshwhetstone - Yes, I see now I made a mistake. It seems that often the number is spelled out as well when used that way (thirteenth-century...).

No problem. That's actually a rule I learned in the last couple weeks doing something at work. I did not know about spelling the numbers out. Usually you only spell out one through ten. Thanks!
