I’m learning about particles and these two sentences came up as an example of determining the subject and object of the sentence.
고양이가 새를 먹어요
새를 고양이가 먹어요
Meaning: The bird eats the cat.
I was wondering if there was a difference between the two sentences and if one is more correct, and is there a better way of saying this sentence these days or is it still the same structure in every day conversation?
(Note: If the sentences are misspelled that’s on me, because in the book it’s romanized and not written in 한글)

새가 고양이를 먹어요 = the bird eats the cat

both sentences are correct just the orders are different there is no better one to say it
ex)선생님이 동생을 가르쳐요
= 동생을 선생님이 가르쳐요

Just follow the order of the words.
고양이가 새를 먹어요.
I see a cat.
The cat is eatting a bird.
새를 고양이가 먹어요.
I see a bird.
A cat is eating the bird.

It's up to what you want emphersize.
And If you want to focus on the bird.
It would be more natural to say
"새를 고양이가 먹고 있어요."
