1) Sto imparando come far funzionare una macchina artigianale Cricut.
I am learning how to operate a Cricut craft machine.
2) Il primo progetto è di decorare due cappelliere.
The first project is to decorate two hat boxes.
3) Uno è per mia nipote e l'altro è per uno dei suoi amici del team di ballo.
One is for my granddaughter and the other is for one of her dance team friends.

se posso "trovare il pelo nell'uovo" (to find a very small error in sth), direi "squadra di ballo" o "gruppo di ballo/danza"

Just some teeny-weeny mistakes.
1) Sto imparando a come far funzionare una taglierina elettrica Circuit.
2) Il primo progetto è decorare due cappelliere./Il primo progetto è quello di decorare due cappelliere.
3) Uno è per mia nipote e l'altro è per uno dei suoi amici del gruppo di ballo.

If in the third sentence you refer to the hat box, as I think, and not to the project this is the right phrase:
3) UnA è per mia nipote e l'altrA è per uno dei suoi amici del GRUPPO di ballo.
Hat box is a feminine noun: la cappelliera (singular form) e le cappelliere (plural form).
