In general, they can all be used in same situations. They do have a slightly different meaning, though.

Minä olen kipeä is the most common way to say "I'm sick"

"Minä olen sairas" sounds more sick than just "kipeä" (and also "sairas" can mean "crazy", so I would in some situations avoid using it).

"Minä olen kipeänä" means "I'm sick att the moment", and it has the feeling that sickness is just temporary.

Adding some thoughts!

I personally feel like it's more formal to say that you're "sairas" than "kipeä" (in addition to that the former sounds like the sickness is somewhat worse). Like if I had to tell my boss I have a standard flu, I'd say "olen sairaana" more likely than "olen kipeänä". And when talking with my friends it'd be the other way round.

Also one key difference is that you can use the word "kipeä" with body parts, meanwhile you can't do that with "sairas". For example if you wanted to say that your back is hurting, you could say "selkäni on kipeä". I guess technically you could say that your back is sick by saying "selkäni on sairas" and be understood, but it'd be more natural to say that YOU HAVE some kind of back condition or that your back just hurts. Just a fun little tip.
